With creamy cilantro dressing!

Prep time - 15 Minutes!
Seasoning for the beans -
* 2 cans black beans, rinsed and drained. Add a 1/2 cup of fresh water to heat the beans with seasoning. * 1 teaspoon chili powder * 1 teaspoon cumin * salt to taste
Combine all, heat until beans are soft. You can use a hand blender if you like smoother beans.
For the Cilantro Topping (gives a great flavor alternative to cheese and sour cream)
* 1 cup vegan mayo
* 1/2 cup packed cilantro leaves (more to taste)
* 2 Tablespoons of pumpkin seeds
* 1 teaspoon salt
Blend on high until smooth (some like it a bit more chunky, blend less)
For the toppings - * 3 tomatoes, chopped
* 1 onion chopped
* 1 medium avocado, sliced or cubed
* 2 cups shredded lettuce
* Crispy or soft tostada shells, any brand to your liking
INSTRUCTIONS 1. Boil beans with seasoning
2. Blend Cilantro Dressing
3. Cut toppings
4. Assemble your masterpiece!
